The stew comes together from a relatively short ingredient list in just about 45 minutes, making it a terrific meal option any night of the week. It features tender leeks, cremini mushrooms, and chunks of skinless, boneless chicken breast, all perfumed with fresh thyme and made creamy with a generous dollop of mustard-tinged sour cream.
Oliver recommends serving it over steamed rice.
If you're not accustomed to cooking with leeks, you might be mystified by their scallions-on-steroids appearance. They do require a bit more TLC than scallions, but preparing them is not difficult. After you've given your leeks an initial rinse, trim off the bottom root end.
